Would there be a possible noticeable gain from going with larger vortec heads such as the Summit Iron 2.02 Vortec heads or the Edelbroc E-Tec Aluminum 2.02 heads on this build?  

The Edelbrock E-tec line of heads are an entry level, not much of a step above the Vortec, heads. The size of the valve won't gain as much as the size/flow potential of the port.

There would be a more noticable gain by going to a bigger set of aftermarket heads in the 195cc neighborhood. I like AFRs but Dart, RHS, and World Products offer good heads too. Be wary of ProComp heads. The price is cheap for a reason.  

i kinda think the vortecs are holding back your 383, especially with smaller valves.   id consider some better flowing aluminum heads, and that cam will probably come to life?    the vortecs are more of a torque, lower rpm head,...possibly evident by your numbers with the motor making more torque then HP with that cam?      just my thoughts.

Better flowing heads should bring in some more horsepower, not to mention you would drop about 50# in the front end switching to aluminum.

The one thing I would add is this. If you are
going to work your truck as a hard working truck
I would stay with an Iron Head. They dissapate
heat a lot quicker and can take a little more
punishment then an aluminum head. Just my 2 Cents.
