I have a 74 Nova witch I put a new 350 from GM with MSD Ignition, Edelbrock Intake, and everything on it is new. When I sit at a light or in traffic its between 210 and 220, I live in florida so I worry in this florida heat. Before I toke out my old motor it always sat at 195, But that before the head gasket when out on it. Oh also I have a Electric Fan and also has the fan thats on the motor when I turn on the Electric Fan it seems it doesn't really do anything at all.

Before the 350, what did the car have in it? Check to make sure the elecric fan is blowing the correct direction. Where is the electric fan, between the motor and radiator, or between the radiator and grille? Either way the electric fan should blow towards the motor either pulling air or pushing air through the radiator. When the motor gets to or above normal temp, squeeze the upper radiator hose, it should be solid and not collapse if the the thermostat is opening up to let the coolant pass through.
