SBC Mud Truck Overheating

I am new to the site, I was told that this would be the best place to get good feedback.
I have the following:
350 SBC Bored .060 Stock Crank Stock Rods Flat top Pistons 292H Cam Holley 750DP 4 Core aluminum Radiator 160 deg Thermostat Dual Electric Fans 7# Radiator Cap 36 deg timing Turbo 400 Trans 2.5 Ton Running gear
With that said, the truck runs great but tends to overheat after each pass in the mud. This is not a race mud truck, I just want to be able to run it all night long without having to shut it off every 15 min.
The truck gets up to about 230 deg in about 10min.
I have the temp probe screwed into the head between cylinders 6&8.
Any help would be greatly appreciated.

Hey Tony, Try a 185 (or higher) T-stat. The 160 might not be holding the water in the radiator long enough for it to cool or maybe a plate with a 3/4" hole. Also I would make sure the electric fans are sufficient.

Wow that overheats pretty quick. Are you sure the fans are spinning in the right direction? That would be blowing air towards the motor.
