what do the terms 18 degree or 23 degree refer to on a cylinder head?

It's refering to the valve angle in the heads. 23 degree heads are the norm, and 18 degree heads are more high end stuff, but are becoming more reasonably priced. The 18 degree heads are better, because of the straighter entrance to the valve from the intake track. This is a very basic explanation, but I hope it's helps out.--Phil
