I am looking at purchasing a newly rebuilt 355 with world product 202 heads and 11:1 pistons. Can I run 91 octain pump gas? I believe the heads are 64cc.

NO! 11:1 is gonna require at least 93 octane, and if you don't have a hot enough ignition system, even the 93 octane won't be enough to prevent detonation.

Have you calculated your actual static and dynamic compression ratios?
11:1 static CR is workable depending on the cam you choose.
